This delicious protein-packed banana bread is super simple to make, nutritious and allergy safe! Enjoy as-is or top with your favourite nut or seed butter.
Yields: 10 Slices
(sugar-free, dairy-free, gluten-free, nut-free, soy-free)
Ingredients:
1 cup oat flour 1 cup chickpea flour 2 scoops of vegan vanilla protein powder 2 Tbsp ground flaxseed 1 tsp baking powder 1/2 tsp baking soda 1 tsp cinnamon 3 large bananas, mashed 1/3 cup plant milk 1/3 cup apple sauce 1/4 chopped dark chocolate or chocolate chips (opt.)
How To Make:
Preheat oven to 350 degrees F. Grease or line a loaf pan. Add dry ingredients to a large mixing bowl and stir to combine. Stir in mashed banana, apple sauce and plant milk. Fold in chocolate chips if using. Bake for 35 to 40 minutes until golden brown. Cool loaf in the pan for 10 minutes. Using a butter knife, gently remove from the pan and cool on a cooling rack for 10 to 15 minutes before enjoying.
